CHINESE BLACK RICE, STEAMED
Steamed Chinese Black Rice can be used for virtually anything a regular white rice can be used for, both savory and sweet. Steamed Chinese Black Rice makes beautiful pilafs, salads (hot and cold) and can be used as a bed for seafood, poultry or meat. Use in sushi rolls for a lavish, unusual twist on traditional sushi. It can be used for delicious desserts such as rice puddings, rice molds and rice balls. Use this rice as a side alone or mix with cooked white rice for eye-catching color and complimenting textures. One thing to keep in mind when using black rice is that when cooked, the color becomes more purple than black and also it will stain anything that it is combined with making the overall color similar to indigo.
Add 1 cup rice and 2-1/4 cups water to pot. Bring to a boil over high heat. Cover, turn heat to low, and simmer for 30-35 minutes until tender. Fluff with fork before serving.
