Split Yellow Peas
Organic Yellow Split Peas have a long history of culinary applications. Peas are believed to have originated in the ancient near East, though they quickly spread to Europe, India and China. Peas have usually been dried and then cooked. Peas being easy to dry and easy to store were a staple for many European diets during long winters or times of famine. Yellow Split Peas are made from dried, hulled, halved Peas.
Split peas are commonly used in soups, especially the well known Ham and Split Pea Soup. Because the yellow splits have been hulled the Legume breaks down when cooked and thereby creates a thick and hearty soup.
