This is the largest in the family of Fregola Sarda. It is great used as a stuffing for game birds. It is also great as an accompaniment to seafood. Try it as a vegetarian offering. It's toasted grains give the final product a wonderful texture and depth of flavor found few other places.Fregola Sarda is a durum wheat toasted pasta from Sardinia. The rough texture of this pasta enables sauces to cling to it exceptionally well.
Use anywhere you want a large grain of cous cous. Salads, stuffings and side dishes are best.
