Eston Lentils (Lens culinaris) are small green lentils that have a mild earthy flavor. They are beautiful to look at due to their slightly speckled appearance. They are the dried seeds of a small shrub and are very common in South Asian cultures. Did you know that the word 'lens' comes from the Latin word for lentil? The round, convex shape of a single lentil characterizes the definition of a lens.

Suggested Use:
