CELLOPHANE NOODLES
Cellophane Noodles, also referred to as Bean Thread, Transparent Noodles or Glass Noodles. These are delicate, almost flavorless Noodles used extensively in Asian cuisine. Cellophane Noodles absorb the flavors and colors of accompanying ingredients, making them ideal for a variety of flavor profiles. Soaked noodles become soft, springy and translucent, while fried noodles puff up and become very white and crispy. Cellophane Noodles are made from Mung Beans instead of Grain Flour, which make them very popular in vegetarian dishes.
Cellophane Noodles can be added to soups, braised dishes, stir-fries and cold salads. Use as a bed for vegetables, fish, chicken or beef. Deep-fry them to add a crunch to your dish or use as a garnish. Cellophane Noodles make great fillers for spring rolls.
