Recipe: Appaloosa Bean Salad with Chipotle Vinaigrette




Amount Ingredient
cup(s)  *appaloosa beans; cooked, cooled and drained 
  red bell peppers; roasted, peeled and diced 
  mango; firm but ripe, peeled and diced 
  chayote; peeled, diced and lightly blanched 
ear(s)  *corn; grilled and cut from the cob 
1/2  cup(s)  fresh cilantro leaves 
tablespoon(s)  adobo sauce 
1/4  cup(s)  corn oil 
tablespoon(s)  honey 
  lemon, juice only 
    salt and pepper to taste 

    Directions:

    Combine all the ingredients in an appropriately sized bowl. Mix gently but thoroughly, garnish and serve.
