Recipe: Chile Pod Corn Chowder




Amount Ingredient
3-4    New Mexico pods; chopped, stems removed 
  Twelve ounce cans of chicken broth 
Cup(s)  potatoes, diced 
Cup(s)  chopped onion 
16  Ounce(s)  *sweet corn (frozen 1 cup grated white cheddar cheese 
Cup(s)  heavy cream 
Teaspoon(s)  pepper 

    Directions:

    Cook the chile pods, chicken broth, onions, corn, potatoes, salt and pepper on medium heat unitl the potatoes are cooked. ( A 1/2 inch dice will take 12-15 minutes.) Add the cream and cheese, and heat until all of the cheese has melted. Remove from the heat and serve with warm tortillas.
