Recipe: Chipotle Chicken Breasts




Amount Ingredient
  boneless chicken breasts 
  *dried chipotle chiles, stems removed 
Tablespoon(s)  olive oil 
Small  onion 
  green onions, chopped 
Large  can of tomatoes 
Tablespoon(s)  chopped garlic 
1/2  Cup(s)  chopped cilantro 
14  Ounce(s)  can chicken broth 

    Directions:

    In a blender, combine chiles, onion, green onion, garlic, cilantro, tomatoes and half of the chicken broth. Saute the chicken breasts in olive oil until browned. Add the contents of the blender, and bring to a boil, using the other half of a can of chicken broth to adjust the sauce consistency. Simmer for 10-12 minutes and serve.
