Recipe: Habas Beans with Garlic and Basil




Amount Ingredient
Cup(s)  *habas beans, soaked 
Large  onion; minced 
4-5  Clove(s)  garlic; minced 
1/4  Cup(s)  olive oil 
Ounce(s)  fresh basil 
1/2  Loaf  bread cut into 1Ó cubes 
    salt and pepper 
    ramano cheese (optional) 

    Directions:

    Cook the soaked habas beans in enough water to cover the beans by two inches. Bring to a boil then reduce heat to a simmer. Cook for 20-30 minutes, until soft. Saute the onions & garlic in olive oil until translucent. Add the basil and cook till fragrant, two minutes. When the beans reach a very soft consistency, mash or blend them with water to create a runny mixture, the texture of a thin milkshake. Add the beans to the onion, garlic, basil mixture and stir over a medium flame. Cook for five minutes then add the chunks of bread, stir till coated. Salt and pepper to taste and add romano cheese, if desired. Stir well and serve.
