Recipe: Indonesian Corn and Coconut Rice




Amount Ingredient
Cup(s)  coconut milk 
1/2  Cup(s)  *basmati rice 
1/2  Cup(s)  *canned sweet corn 
Tablespoon(s)  fresh grated coconut 
    salt and pepper 

    Directions:

    Rinse the rice well and place in a saucepan with the coconut milk. Bring to a boil and simmer until the coconut milk is almost all absorbed. Mash the corn lightly with a wooden spoon. Add the mashed corn and mix well. Steam well for 15 minutes until the rice is tender. Turn off the heat ans let sit for 10 minutes. Mix in the fresh coconut. Serve with steamed or sauteed vegetables
