Recipes: New Year's Day Black Eyed Peas




Amount Ingredient
Cup(s)  *blackeyed beans, soaked overnight 
Stalk(s)  celery, diced 
Cup(s)  stock or water 
Tablespoon(s)  red wine vinegar 
Small  hot pepper 
Pound(s)  chopped collard greens 
Large  onion diced 
    oil for frying 
1/2    green pepper, diced 
    salt and pepper to taste  

    Directions:

    Simmer the beans in the stock along with the hot pepper for 30 minutes or until beans are almost tender. In a frying pan saute the onion, green pepper, and celery for five minutes. Add the vegetable mixture to the beans along with the vinegar. Simmer for 15 minutes. Add the chopped greens and cook on low flame for 30 more minutes. Season with salt and pepper.
