Recipe: Orange Flavored Red Corn Muffins




Amount Ingredient
1 1/2  Cup(s)  *wild red corn meal 
Tablespoon(s)  baking powder 
1/3  Cup(s)  whole wheat flour (or 1/2 cup all purpose flour) 
1/2  Teaspoon(s)  allspice and cinnamon 
Tablespoon(s)  grated orange peel 
10  Ounce(s)  soft tofu 
1/3  Cup(s)  honey or brown rice syrup 
1/4  Cup(s)  margerine 
2/3  Cup(s)  orange juice 

    Directions:

    In a large bowl add the dry ingredients and the orange peel. Mix well. In a blender combine the tofu, syrup, margarine and juice and blend well. Add this to the dry ingredients and blend with a wooden spoon until just blended, do not over mix. Pour the muffin mixture into prepared muffin tins and bake at 350 for 15-20 minutes, or until golden brown.
