Recipe: Soybean Casserole with Black Trumpet Mushrooms




Amount Ingredient
Cup(s)  *cooked soybeans 
Clove(s)  garlic, chopped 
Cup(s)  *cooked brown rice 
Tablespoon(s)  fresh basil 
  beaten eggs 
Tablespoon(s)  butter 
Cup(s)  cottage cheese 
3/4  Cup(s)  bread crumbs 
3/4  Cup(s)  reconstituted black trumpets save the soaking water 
  onions, chopped 
1/4  Cup(s)  parsley, chopped 

    Directions:

    Saute the onions, garlic, black trumpets and basil in butter for 7 minutes. Add the beans, rice, eggs and cheese. Stir well. Add the mushroom water, 2 tablespoons at a time, until the mixture is moist but not runny (around 1/4-1/3 cup total). Spread in a baking pan and top with a combination of parsley and bread crumbs. Bake at 350 for 45 minutes.
