Recipe: Stewed Fava Beans With Tomatoes and Basil




Amount Ingredient
Cup(s)  *fava beans; cooked, split and peeled 
  roma tomatoes; blanched, peeled, seeded and cut into quarters 
Clove(s)  garlic, minced 
Ounce(s)  extra virgin olive oil 
1/4  Ounce(s)  basil leaves 
Tablespoon(s)  unsalted butter; cut into pieces 
    salt and pepper to taste 

    Directions:

    Heat a skillet on the stove and add oil. Add garlic, saute very briefly and add tomatoes. As the tomatoes begin to cook, add fava beans and let simmer for 3 minutes. Remove from heat and stir in basil leaves, then the butter pieces. Adjust the seasonings and serve.
