Mix the flours together with the mushroom powder and a pinch of salt, blend thoroughly and make a well in the middle of the flour
mixture. Into this well, drop the the beaten egg and gradually mix with the flour, pulling the flour in from the sides. Add the water so that the dough
is moist enough to be kneaded. This is a feeling which is achieved only through experience. Knead the dough for 10-15 minutes. Cover the dough and let it
rest for 45 minutes. Roll out the dough and cut into strips; or put through a pasta machine. After the pasta has been formed, boil water in a large pot
and drop the fresh pasta into the water. Remove after three minutes, drain, rinse and serve tossed with olive oil and fresh basil.
